Employers usually don't expect you to know every last detail of your future plans. I suggest saying that you expect to be at whatever position you are interviewing for, perhaps with some supervisory responsibilities. You can also talk about some potential credentialing/certifications you are interested in pursuing, ones that are directly applicable to the position.
