I was currently enrolled in college night classes, so I mentioned those. I also am a big reader, especially of business or leadership directed books (Ziglar, John Maxwell, etc...), I was asked about the most recent book I've read and I explained it (48 Days to the Work You Love...a really good read.) But the essential answer to the question will show that you enjoy to improve yourself and learn because this will be crucial to your survival.
