Pros

Easy to serve or bartend, the chef’s cook at the table so there is not much food running. Everyone is nice and in the mood to have a good time. Normal length shifts (6 hours) and servers make great money!

Cons

Bartenders don’t make money because they do not pool with the servers, the bar is upstairs so people don’t tend to sit there because they come to see the chef’s cook in front of them at the tables. Lots of tiki drinks which can be a lot of prep too
