Best learning environment for culinary professionals looking to learn and specialize in authentic italian cuisine outside of italy

Cons

Pay rate for the city in which it is located. 10.25/hr in New York City is way to low and even as an intern I was making the same as a regular employee would

Pros

You'll never ever hate being at work. It's impossible to work here and be in a bad mood or anything. Very family oriented environment, lots of bustling/change, fun. They have great intentions, and do strive to take care of all employees. Managers do have a lot more comfort than entry level employees. A whole lot.

Cons

Poor organization before making company wide decisions/choices. Usually not thought out before executed... They have mentioned that this is "Italian Style". Pay rate is low, and raises can be granted by simply demanding one. Many employees that deserved better never got recognized.
