Pros
Very good money. A lot of freedom due to lack of management presence
Cons
Very long working hours. Usually at least 12 hours. Morning shift 4am to 3-4 pm. 5-6 days a week. It is very hard to predict how busy the restaurant will be at any given time so this usually translates to not enough staff and can be extremely stressful. It is a very disorganized place to work
