Good food philosophy and service expectations delivered to client. Good pay for Managers and Chefs. Good clients to work for that support you and supply you with the tools that you need.
Cons
Low wages for the hourly staff. Hard to motivate and keep good people. Upper management micro manage you. Long hours. Corporate not much support in all departments.
