Some very nice people can be found among the muck.
Cons
Very political environment. Not allowed to think for yourself and even if you do everything they ask you to, you are just a small pawn in a much bigger game commonly referred to the "good ole' boys system". Additionally, they hire whatever applies, so your people will most likely be unmotivated and adversarial to anyone's goals but theirs, making forward progress near impossible. If you fire someone, be prepared to see them turn up at another restaurant no matter how agregious the act was, which makes it hard to manage because they do not fear losing their jobs. Lastly, it is never the fault of the crew member for their bad behavior (no matter what), it is always the fault of the GM for not training hard enough. Lastly, they preach work/life balance but it is not uncommon to work 75-80 hrs/week because of being short and don't expect to get any of that time back. You will be on call 24/7 and you will be expected to drop whatever you are doing and rush to the restaurant to fill in if there are call-outs ... even if you just closed at 5am and need to be back at 8am. They don't care because the restaurant comes first.
