Pros

Research can be both interesting and meaningful. A lot of quality work is done by researchers with world class experience and backgrounds. Overhead is relatively low for a university.

Cons

It's in northern Utah. Obtaining funding can be significantly more difficult than at more prestigious organizations although research output expectations are just as high.

Utah State University is located in a quiet town, which allows you to focus on your studies. Also, there are some interesting research projects being conducted.

Cons

It gets really cold here in winter and the pay of a graduate research assistant is not that much.
