Part of why the rate of learning and career growth is so high is because every team member is required to take deep ownership of their work and deliver results quickly. This often means dealing with a lot more ambiguity, doing tasks outside the scope of your traditional role, and simply doing a lot more work faster than you would at a larger company. The experiences can be extremely rewarding for those that are willing to put in the work but demands are (reasonably) high. Furthermore, a lot of processes are still being figured out around product development and the team is rapidly evolving. In these environments being able to proactively identify, prioritize, and solve problems independently is a must.
